Kitchen Son loves to eat it.<br \/>\nThis recipe from the <a href=\"http:\/\/smittenkitchen.com\/2007\/07\/summer-of-the-bats\/\">smitten kitchen<\/a> appears to be this season&#8217;s winner.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2011\/05\/IMG254770.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2011\/05\/IMG254770.jpg\" alt=\"\" title=\"IMG254770\" width=\"500\" height=\"333\" class=\"aligncenter size-full wp-image-1145\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2011\/05\/IMG254770.jpg 500w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2011\/05\/IMG254770-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/a><br \/>\n<em>Ingredients:<\/em><br \/>\n3 eggs<br \/>\n1 cup olive or vegetable oil<br \/>\n1 3\/4 cups sugar<br \/>\n2 cups grated zucchini<br \/>\n2 teaspoons vanilla extract<br \/>\n3 cups all-purpose flour<br \/>\n3 teaspoons cinnamon<br \/>\n1\/8 teaspoon nutmeg<br \/>\n1 teaspoon baking soda<br \/>\n1\/2 teaspoon baking powder<br \/>\n1 teaspoon salt<br \/>\n(I skipped  adding nuts and dried fruit &#8211; for the original recipe visit the link above)<\/p>\n<p>Preheat oven to 350\u00b0F.<\/p>\n<p>Grease and flour two 8\u00d74 inch loaf pans, liberally or I prefer to use parchment paper and skip the greasing part. <\/p>\n<p>In a large bowl, beat the eggs with a whisk. Mix in oil and sugar, then zucchini and vanilla.<\/p>\n<p>Combine flour, cinnamon, nutmeg, baking soda, baking powder and salt.<\/p>\n<p>Stir this into the egg mixture. Divide the batter into prepared pans.<\/p>\n<p>Bake loaves for 60 minutes, plus or minus ten, or until a tester inserted into the center comes out clean.
