{"id":120,"date":"2008-04-15T19:02:14","date_gmt":"2008-04-15T19:02:14","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=120"},"modified":"2008-04-15T19:02:14","modified_gmt":"2008-04-15T19:02:14","slug":"camp-food","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=120","title":{"rendered":"Camp Food"},"content":{"rendered":"<p>The junior kitchen family went camping over the weekend, (okay, Kitchen Mom\u2019s idea of camping, because it was an air-conditioned cabin in the woods) and we had an opportunity to do some outdoor grilling. We took along a bunch of vegetables and this <a href=\"http:\/\/www.amazon.com\/Asian-Kitchen-Cheong-Liew\/dp\/0794604986\/guilofscie-20\">Asian cookbook<\/a>.<\/p>\n<p>We modified a couple of the Indian recipes and came up with versions of <strong>vegetable skewers<\/strong> and <strong>roasted eggplant<\/strong>. Kitchen Dad also <strong>roasted some sweet potatoes<\/strong>, which is an easy, delicious way to make them.<\/p>\n<h3>Camp-Roasted Sweet Potatoes<\/h3>\n<p>Simply light a fire, let it burn down until there are plenty of <strong>embers<\/strong>. While that\u2019s going on, lay your sweet potatoes on sheets of tin foil, poke with a fork or knife along one side, pour on <strong>about a tablespoon of oil or butter<\/strong>, then wrap securely in tin foil and bury \u2019em in the embers for <strong>45 minutes or so<\/strong> \u2013 until soft, caramelized and delectable. Let them cook while you do the rest of the cooking. They\u2019re the easiest thing to make and always the star of the campfire meal.<\/p>\n<h3>Roasted Eggplant<\/h3>\n<ul>\n<li>Several eggplants<\/li>\n<li>oil<\/li>\n<li>garlic cloves<\/li>\n<li>2 onions, diced<\/li>\n<li>1 1\/2 teaspoons ground coriander<\/li>\n<li>1 teaspoon  ground red pepper<\/li>\n<li>1 teaspoon <strong>garam masala<\/strong> spice mix (available at Indian groceries, or <a href=\"http:\/\/www.kitchenchick.com\/2006\/06\/garam_masala.html\">made at home<\/a>)<\/li>\n<li>2 teaspoons cumin seeds<\/li>\n<li>1\/2 teaspoon whole cloves (depending on your Garam Masala mix \u2013 some are very clovey, ours wasn\u2019t.)<\/li>\n<li>3 medium tomatoes<\/li>\n<li>1 teaspoon salt<\/li>\n<li>1 tablespoon cilantro, chopped<\/li>\n<\/ul>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/roastegg1.jpg\" title=\"roastegg1.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/roastegg1.jpg\" alt=\"roastegg1.jpg\" \/><\/a><br \/>\nUnless you have thin, Asian eggplants, <strong>cut eggplants into quarters<\/strong> to ensure they cook through. <strong>Rub<\/strong> the outside of the eggplant <strong>with oil<\/strong> and cut slits to <strong>insert slivers of garlic<\/strong> in the flesh.<\/p>\n<p><strong>Roast<\/strong> on a hot grill until the skin blackens and the eggplant is soft inside.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/roastegg.jpg\" title=\"roastegg.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/roastegg.jpg\" alt=\"roastegg.jpg\" align=\"left\" hspace=\"6\" vspace=\"6\" \/><\/a><\/p>\n<p>Meanwhile, <strong>heat cumin seeds and cloves in oil<\/strong> in a skillet until they\u2019re brown and toasty. Add the onions and <strong>stir-fry<\/strong> until lightly browned. Then add the coriander, red pepper and garam masala. Stir-fry for 1 minute. Add the tomatoes and continue to stir-fry for another 2-3 minutes. Scoop out the eggplant, mix it in with salt, and stir until dry and soft. Sprinkle with cilantro, serve over rice or <a href=\"http:\/\/juniorkitchen.com\/?p=54\">naan bread<\/a>.<\/p>\n<h3>Vegetable Skewers<\/h3>\n<ul>\n<li>2 bell peppers, sliced<\/li>\n<li>pineapple slices<\/li>\n<li>mushrooms, either small heads (better) or sliced portobellos (seemed like a good idea at the time)<\/li>\n<li>1 onion, sliced<\/li>\n<li>cherry tomatoes<\/li>\n<li>long thin wooden sticks (we let the kids hunt for the perfect sticks to help keep them busy, but you can use store-bought wooden skewers)<\/li>\n<\/ul>\n<p>(The original recipe also called for cubes of paneer, or Indian cheese, but making that was too much like work.)<\/p>\n<p><strong>Marinade<\/strong><\/p>\n<ul>\n<li>1 cup plain yogurt<\/li>\n<li>3 Tbs oil<\/li>\n<li> 1 tsp coriander<\/li>\n<li>1\/2 tsp cumin<\/li>\n<li>1 tsp red pepper flakes<\/li>\n<\/ul>\n<p align=\"left\">Mix spices, oil and yogurt together, and <strong>marinate <\/strong>the peppers, onions and mushrooms for a couple of hours (We did this in the refrigerator, because this wasn\u2019t <em>really<\/em> camping.)<\/p>\n<p align=\"left\"> <a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewerstick.jpg\" title=\"skewerstick.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewerstick.jpg\" alt=\"skewerstick.jpg\" width=\"500\" \/><\/a><\/p>\n<p>We let the kids assemble the skewers.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewerhelp.jpg\" title=\"skewerhelp.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewerhelp.jpg\" alt=\"skewerhelp.jpg\" align=\"left\" \/><\/a><\/p>\n<p align=\"left\">\u00a0<\/p>\n<p align=\"left\">\u00a0<\/p>\n<p align=\"right\">\u2026with a little help.<\/p>\n<p align=\"left\">\u00a0<\/p>\n<p align=\"right\">After they\u2019re assembled\u2026<\/p>\n<p align=\"left\">\u00a0<\/p>\n<p align=\"center\">\u2026place them on the grill.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewer.jpg\" title=\"skewer.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/04\/skewer.jpg\" alt=\"skewer.jpg\" \/><\/a><\/p>\n<p>Grill until tender.<\/p>\n<p>Serve hot.<\/p>\n<p>(Note: the pictures show flames in the grill and burnt edges on the vegetables.
