I&#8217;ve discovered that kids are great at helping with prep work like cleaning vegetables.  This recipe I owe to another blogger, <a href=\"http:\/\/foodiefarmgirl.blogspot.com\/2007\/04\/give-beets-chance-caramelized-beets.html\">Farmgirl Fare<\/a>. She just won the best rural food blog award, and she swears by this beet recipe. You definitely need to go check out her site cuz I never thought I would like beets but these are pretty awesome.<\/p>\n<p>Caramelized  Beets with Garlic &#8211;<\/p>\n<p><strong>A pile of beets<\/strong>. We get ours from a CSA so I&#8217;m never sure how many we&#8217;ll have but it&#8217;s usually a good amount. Clean them and then cut the tops and ends off. (We save the tops and use the beet greens in curry dishes.)<\/p>\n<p>Next, dice them into small cubes &#8211; about an inch square. I pour about <strong>2 tablespoons of olive oil<\/strong> in a pot, heat it up and then throw the beets in. You need to cook these beets <strong>very slowly<\/strong> over a low heat, stirring to coat them with the oil occasionally.<\/p>\n<p>Meanwhile, you peel <strong>several cloves of garlic<\/strong> and sprinkle generously  with <strong>salt<\/strong>. After the beets have caramelized, you make a small hole in the center of the pile in the pan and toss the garlic in, making sure it touches the bottom of the pan. After a couple of minutes, but before it turns brown, you stir the garlic in with the beets and serve.
