But we know his weakness. He can&#8217;t resist cheese&#8230;any kind of cheese&#8230; and the creamy melted goodness of feta sucks him in every time. He never even notices he&#8217;s eating spinach with this dish.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li><strong>A box of pasta noodles.<\/strong> (13.5 ounces. We like penne but any shape would be okay.)<\/li>\n<li><strong>Spinach leaves, fresh or frozen.<\/strong> (1-2 cups but really this depends on just how green you want to go.) <\/li>\n<li><strong>1 onion,<\/strong> chopped.<\/li>\n<li><strong>Feta cheese, <\/strong>8-ounce package, crumbled.  <\/li>\n<li><strong>Olive oil,<\/strong> 4 Tablespoons (or enough to coat the pasta)<\/li>\n<li><strong>Lemon juice,<\/strong> (1\/2 lemon or equivalent, tweak to taste) <\/li>\n<li><strong>Red wine vinegar,<\/strong> (1 Tablespoon, then tweak to taste)<\/li>\n<li><strong>Salt and pepper<\/strong><\/li>\n<\/ul>\n<p><strong>Cook the pasta<\/strong> according to the directions on the box. At the same time that&#8217;s cooking, pour a few tablespoons of olive oil into a skillet and <strong>saute the onions at medium high heat<\/strong>. Add the spinach to the onions when they become transparent.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/passpin.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/passpin-300x220.jpg\" alt=\"Pasta! Spinach!\" title=\"passpin\" width=\"300\" height=\"220\" class=\"alignnone size-medium wp-image-203\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/passpin-300x220.jpg 300w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/passpin.jpg 500w\" sizes=\"auto, (max-width: 300px) 100vw, 300px\" \/><\/a><\/p>\n<table>\n<tr>\n<td>After the pasta has been drained, place it in a bowl and get an eager young assistant to <strong>add the feta<\/strong>. <\/td>\n<td><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/feta.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/feta.jpg\" alt=\"\" title=\"feta\" width=\"250\" height=\"222\" class=\"alignright size-medium wp-image-213\" \/><\/a><\/td>\n<\/tr>\n<\/table>\n<p>Small hands can <strong>stir the feta around the noodles<\/strong> until the cheese gets warm and starts to melt. <\/p>\n<p>That&#8217;s the moment to <strong>add the spinach and onions<\/strong>.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/photo-009.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/09\/photo-009.jpg\" alt=\"\" title=\"photo-009\" width=\"300\" height=\"280\" class=\"alignnone size-full wp-image-205\" \/><\/a><\/p>\n<p>After everything is mixed, add the olive oil, lemon juice and vinegar. I start out with a few tablespoons of oil and a couple teaspoons of vinegar and then taste it, add a little more, taste again, add a little more &#8211; just remember you can always add, but you can never take away.
