{"id":230,"date":"2008-10-07T12:53:24","date_gmt":"2008-10-07T12:53:24","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=230"},"modified":"2008-10-26T01:40:52","modified_gmt":"2008-10-26T01:40:52","slug":"three-bean-salad","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=230","title":{"rendered":"Three-Bean Salad"},"content":{"rendered":"<p>I&#8217;d been staring at the pantry, wondering what we could throw together with three cans of beans and whatever else we could scrounge, when I opened my email and found a version of this quick, delicious recipe in the <a href=\"http:\/\/www.laptoplunches.com\/newsletters\/OctoberNewsletter_2008.html\">Laptop Lunches<\/a> newsletter (where it was part of a great interview with <a href=\"http:\/\/www.bemomalicious.com\/blog\/?cat=19&#038;paged=3\">Mom-a-licious Chef Domenica Catelli<\/a>, so check it out!). We did a few substitutions based on what we had at hand, and wound up with a nutritious meal that had the kids begging for extra helpings. <\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/celery.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/celery.jpg\" alt=\"\" title=\"celery\" width=\"450\" height=\"281\" class=\"alignnone size-full wp-image-231\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/celery.jpg 450w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/celery-300x187.jpg 300w\" sizes=\"auto, (max-width: 450px) 100vw, 450px\" \/><\/a><\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>Kidney beans, black beans, garbanzo beans (1 can each).<\/li>\n<li>Two stalks celery, chopped. <\/li>\n<li>A good-sized handful of parsley. (It might be worth experimenting by subbing cilantro, but that would make this taste completely different.)<\/li>\n<li>1\/4 of a small purple onion, chopped.<\/li>\n<li>1\/4 of a small white onion, chopped (yes, we really were digging up whatever we could find).<\/li>\n<li>Juice of 1 large lime. <\/li>\n<li>A few jiggers of bottled lemon juice.<\/li>\n<li>Two Tablespoons of olive oil.<\/li>\n<li>Three or so pinches of <a href=\"http:\/\/shop.evergladesseasoning.com\/main.sc\">Everglades Seasoning<\/a> (this is a seasoning salt along the lines of Lawry&#8217;s or Tony Chachere&#8217;s, but better. And with <a href=\"http:\/\/members.aol.com\/bjprophet\/EGS\/free.htm\">free samples!<\/a> You can use salt and pepper here, instead.) <\/li>\n<\/ul>\n<p>Drain and rinse the beans and plop them in a bowl. Enjoy the aroma of fresh lime. Let it fill the kitchen.<br \/>\n<br \/>\n&nbsp;<\/p>\n<p>Squeeze the lime-quarters over the onions on top of the beans. Let it sit there for a few minutes (soaking onions in something acidic like vinegar, lemon or lime juice does wonders for their flavor).<br \/>\n\n<\/td>\n<\/tr>\n<\/table>\n<p>Add the oil and seasoning salt, and lemon juice to taste. Toss it all together, and again, let it sit for five minutes. Or 15 minutes&#8230; if you can keep small fingers from stealing a bean, then another bean, then another!<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/beas2.jpg\"><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/beas2.jpg\" alt=\"\" title=\"beas2\" width=\"455\" height=\"254\" class=\"alignnone size-full wp-image-239\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/beas2.jpg 455w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/10\/beas2-300x167.jpg 300w\" sizes=\"auto, (max-width: 455px) 100vw, 455px\" \/><\/a><\/p>\n<p>Serve at room temperature to your eager family. It tastes like the end of summer. <\/p>\n<p><i>(Next week &#8211; the end of summer!
