{"id":27,"date":"2008-01-15T17:50:08","date_gmt":"2008-01-15T17:50:08","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=27"},"modified":"2008-02-22T01:53:21","modified_gmt":"2008-02-22T01:53:21","slug":"fourgasses-bread","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=27","title":{"rendered":"Fougasses Bread"},"content":{"rendered":"<p>  <a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/new-year-125.jpg\" title=\"new-year-125.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/new-year-125.jpg\" alt=\"new-year-125.jpg\" \/><\/a><\/p>\n<p>For a 2-pound loaf<\/p>\n<p>1 1\/2 cups water<\/p>\n<p>4 teaspoons olive oil or cooking oil (we used olive oil)<\/p>\n<p>2 2\/3 cups bread flour<\/p>\n<p>1 1\/2  whole wheat flour<\/p>\n<p>1 1\/2 teaspoons sugar<\/p>\n<p>4 teaspoons  dried sage, crushed or snipped fresh sage (we used fresh)<\/p>\n<p>1 teaspoon salt<\/p>\n<p>1 1\/4 active dry yeast or bread machine yeast ( we used the bread machine type)<\/p>\n<p>Milk (optional)<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/sage.jpg\" title=\"sage.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/sage.jpg\" alt=\"sage.jpg\" \/><\/a><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/sage2.jpg\" title=\"sage2.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/sage2.jpg\" alt=\"sage2.jpg\" \/><\/a><\/p>\n<p>At our house we use a bread machine for the making the dough because it saves  oodles of time. After <strong>placing all the ingredients in the bread machine<\/strong> and letting it do its thing I come back in an hour or so and <strong>remove the dough from the pan and punch it down<\/strong>. Let it <strong>rest for 10 minutes<\/strong> and then <strong>divide it into thirds<\/strong>.<\/p>\n<p><strong>Roll out <\/strong>each portion to make <strong>8\u00d74 <\/strong><strong>rectangles<\/strong>. Make <strong>3 diagonal cuts<\/strong>  across the top and <strong>stretch the dough<\/strong> out a little <strong>to widen the slits<\/strong>.<\/p>\n<p>Place on a <strong>prepared baking sheet<\/strong>, <strong>cover <\/strong>and <strong>set in a warm place for 30 minutes <\/strong>or until it nearly doubles in size. Now you may brush it with a little milk if you like.<\/p>\n<p><strong>Bake in a <strong>375 degree<\/strong><\/strong> oven for <strong>20 to 25 minutes <\/strong>until the bread is <strong>light brown and sounds hollow <\/strong>when lightly tapped. Cool on wire racks. This bread turned out to be exceptionally tasty. Try it with some hot mustard and sharp cheddar cheese.
