{"id":41,"date":"2008-01-28T01:18:11","date_gmt":"2008-01-28T01:18:11","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=41"},"modified":"2008-02-22T01:50:28","modified_gmt":"2008-02-22T01:50:28","slug":"hot-and-spicy-hawker-noodles","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=41","title":{"rendered":"Hot and Spicy Hawker Noodles"},"content":{"rendered":"<p>a.k.a. <em>Hong Tang Dan Dan Mian<\/em>.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/readcook.jpg\" title=\"reading the cookbook in between snipping up green onions\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/readcook.thumbnail.jpg\" alt=\"reading the cookbook\" \/><\/a> We modified the recipe from this <a href=\"http:\/\/www.amazon.com\/Food-China-Authentic-Recipes-Periplus\/dp\/9625933905\/theguilofscie-20\/\" target=\"_blank\">book<\/a> and were able to purchase all the Chinese ingredients from our local Chinese food market.<\/p>\n<p><strong>Noodles<\/strong> (wheat noodles)<br \/>\n<strong> 1 tsp cooking oil<\/strong><br \/>\n<strong> fake-it pork<\/strong> (a broken up veggie burger mixed with tofu)<br \/>\n<strong> 1\/2 cup salted radish<\/strong> (we used Fuling pickle, or<em> zhacai<\/em>)<br \/>\n<strong> 2 cups stock<\/strong> (we used fish stock, but chicken stock or vegetable bouillon will work)<br \/>\n<strong>4 Tbs soy sauce<\/strong><br \/>\n<strong> 1 1\/2 Tbs black rice vinegar<\/strong><br \/>\n<strong>2 cloves finely chopped garlic<\/strong><br \/>\n<strong> 2 tsp Sichuan pepper oil<\/strong><br \/>\n<strong> 2 tsp sesame oil<\/strong><br \/>\n<strong> 1 tsp chili oil<\/strong><br \/>\n<strong> 1 tsp ground white pepper<\/strong><br \/>\n<strong> 1 heaped Tbs sliced spring onion<\/strong><\/p>\n<p>Heat cooking oil to high and stir fry the tofu\/veggie burger mix for three minutes. Mix with the radish and set aside.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/hawkno1.jpg\" title=\"hawker noodles, like the street hawkers sell\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/01\/hawkno1.jpg\" alt=\"hawkno1.jpg\" align=\"right\" \/><\/a>Heat stock to medium and add all the other ingredients except the noodles and spring onion.<\/p>\n<p>Bring a pot of water to a rolling boil and blanch the noodles for 1 minute (or until done).<\/p>\n<p>Drain the noodles and divide among 4 small bowls.
