{"id":410,"date":"2009-02-16T16:50:42","date_gmt":"2009-02-16T16:50:42","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=410"},"modified":"2009-02-13T20:50:56","modified_gmt":"2009-02-13T20:50:56","slug":"courgette-cake","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=410","title":{"rendered":"Courgette Cake"},"content":{"rendered":"<p>The kids and I were looking for something special to celebrate Kitchen Dad&#8217;s birthday and stumbled across this <a href=\"http:\/\/www.designspongeonline.com\/2009\/02\/in-the-kitchen-with-matt-armendariz-and-kristina-gill.html\">recipe<\/a>.\u00a0 The photographs were so beautiful, I just knew the cake would be special too. And it was! I tweaked it a bit to accommodate for ingredients I didn&#8217;t have, like caster sugar (superfine sugar, but not as fine as icing sugar) and sultanas (essentially, golden raisins. Only not quite.).<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1 stick butter, softened at room temperature<\/li>\n<li>1 cup sugar<\/li>\n<li>2 eggs<\/li>\n<li>2 small zucchini (in British, courgette. Don&#8217;t ask why.)<\/li>\n<li>1 small apple<\/li>\n<li>1 cup\u00a0 flour<\/li>\n<li>Large pinch salt<\/li>\n<li>\u00bd teaspoon baking powder<\/li>\n<li>Large pinch cinnamon<\/li>\n<li>1\/2 cup walnuts, chopped<\/li>\n<li>1\/2\u00a0 cup golden raisins<\/li>\n<\/ul>\n<p>Preheat oven to 325. Have some small, nimble fingers grease an 8&#215;5 loaf pan. Whip together butter and sugar until creamy and fluffy. Beat eggs and gradually mix them in, making sure each egg is fully incorporated before adding the next. <\/p>\n<p>Coarsely grate zucchini. Squeeze to remove any excess moisture (fun!), then add to batter. Cut the apple into small pieces and add them, too.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-412\" title=\"zuccake2\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake2.jpg\" alt=\"zuccake2\" width=\"400\" height=\"267\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake2.jpg 400w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake2-300x200.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Mix flour, salt, baking powder and cinnamon, and gently fold into mixture. Stir in nuts and sultanas\/raisins.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-413\" title=\"zuccake1\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake1.jpg\" alt=\"zuccake1\" width=\"400\" height=\"267\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake1.jpg 400w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/02\/zuccake1-300x200.jpg 300w\" sizes=\"auto, (max-width: 400px) 100vw, 400px\" \/><\/p>\n<p>Transfer to pan and bake for 60 minutes or until golden and firm to the touch.
