It\u2019s versatile enough to be mixed with other veggies for a stir fry but can also stand alone. For this recipe I used a spicy vinaigrette that I improvised after googling and finding several variations.<\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>1 large head of Bok Choy<\/li>\n<li>1\/4 cup water<\/li>\n<\/ul>\n<h4>For the Vinaigrette:<\/h4>\n<ul>\n<li>1\/4 cup rice vinegar<\/li>\n<li>1 tablespoon chili sauce (we have a thing for <a href=\"http:\/\/en.wikipedia.org\/wiki\/Sriracha\">Sriracha<\/a>, but anything would do \u2013 Tabasco, Crystal, whatever)<\/li>\n<li>2 scallions sliced thin<\/li>\n<li>a dash of salt and pepper<\/li>\n<li>2 tablespoons vegetable oil<\/li>\n<\/ul>\n<p>In a small bowl, mix all the ingredients for the vinaigrette and set aside.<\/p>\n<p>You can adjust the amount of hotness by adding less chili sauce. (Note: Our kids are from the Sichuan area of China which is famous for serving <a href=\"http:\/\/en.wikipedia.org\/wiki\/Hot_pot\">hot pot<\/a>, and, like their parents, have a taste for spicy foods. Being in that part of China was a culinary treat. Hot pot is <i>good<\/i>. This bok choy is nothing like hot pot. Except for also being <i>good<\/i>.)  <\/p>\n<p>Cut the bok choy into small pieces and put in a skillet with 1\/4 cup water. Simmer the bok choy until it\u2019s soft and most of the water has been reduced away.<\/p>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"alignnone size-full wp-image-455\" title=\"bokk\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/03\/bokk.jpg\" alt=\"bokk\" width=\"350\" height=\"233\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/03\/bokk.jpg 350w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/03\/bokk-300x199.jpg 300w\" sizes=\"auto, (max-width: 350px) 100vw, 350px\" \/><br \/>\nSometimes the kitchen help will distract themselves while they wait for things to simmer.  Watching cabbage cook is, alas, less fun than a barrel of monkeys. <\/p>\n<p>Just before you\u2019re ready to serve, pour the vinaigrette over the greens and mix together. Serve warm \u2013 although it\u2019s not so bad dished up like a pickle at room temperature, either. Kitchen Dad compares it to <a href=\"http:\/\/www.lovethatkimchi.com\/\">kimchi<\/a> that way.
