{"id":54,"date":"2008-02-21T06:33:03","date_gmt":"2008-02-21T06:33:03","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=54"},"modified":"2008-02-22T01:40:29","modified_gmt":"2008-02-22T01:40:29","slug":"eggplant-bharta","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=54","title":{"rendered":"Eggplant Bharta and Naan Bread"},"content":{"rendered":"<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/eggplant.jpg\" title=\"eggplant.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/eggplant.jpg\" alt=\"eggplant.jpg\" align=\"left\" hspace=\"15\" vspace=\"20\" \/><\/a><\/p>\n<p align=\"center\">\u00a0<\/p>\n<p> Eggplants from the farm are still producing so I decided to make an Indian dish with them.<\/p>\n<p>I found this <a href=\"http:\/\/www.ivu.org\/recipes\/indian-veg\/eggplant-bharta.html\">recipe <\/a>for Eggplant Bharta.<\/p>\n<p align=\"center\">\u00a0<\/p>\n<p align=\"center\">\u00a0<\/p>\n<p align=\"center\">\u00a0<\/p>\n<p align=\"center\">\u00a0<\/p>\n<ul>\n<li>\n<p align=\"left\">1-1.5 lb eggplant<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 onion \u2013 chopped<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 tomato \u2013 chopped, or 1 tbsp tomato paste, or 1 tsp tamarind paste<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 tsp cumin seed<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 jalapeno pepper \u2013 chopped (optional \u2013 we didn\u2019t use one this time)<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 tsp salt<\/p>\n<\/li>\n<li>\n<p align=\"left\">1\/2 tsp red pepper flakes<\/p>\n<\/li>\n<li>\n<p align=\"left\">1 tbsp cooking oil<\/p>\n<\/li>\n<\/ul>\n<p><strong>Prick<\/strong> the eggplant in several places, then <strong>microwave<\/strong> until soft and pulpy (we did it in increments of 10 minutes, and it took about 30 minutes total \u2013 it was a big eggplant). Wait until <strong>cool<\/strong> enough to handle. Scrape all the flesh out and <strong>mash<\/strong>.<\/p>\n<p>Heat oil over medium heat, when hot, add <strong>cumin seeds<\/strong>. When they sizzle, add all other ingredients.<\/p>\n<p><strong>Stir<\/strong> well to mix. Cook over med-low for about 15 minutes.<\/p>\n<p>The bharta was served over <strong>basmati rice<\/strong> with homemade <strong>mango relish<\/strong> (thank you, Uncle Russel) and <a href=\"http:\/\/en.wikipedia.org\/wiki\/Naan\">naan bread<\/a>. I found a recipe to make naan in this <a href=\"http:\/\/www.amazon.com\/Grilling-Exciting-International-Flavors-Culinary\/dp\/0867309059\/theguilofscie-20\/\">cook book<\/a>.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/naan.jpg\" title=\"naan.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/naan.thumbnail.jpg\" alt=\"naan.jpg\" align=\"right\" hspace=\"10\" vspace=\"20\" \/> <\/a><\/p>\n<ul>\n<li>2 1\/2 tsp active dry yeast<\/li>\n<li>3\/4 cup water<\/li>\n<li>3 cups all purpose flour ( we used bread flour and that seemed to work okay)<\/li>\n<li>1\/3 cup plain yogurt<\/li>\n<li>1\/4 cup vegtable oil<\/li>\n<li>1 egg, lightly beaten<\/li>\n<li>2 tbsp granulated sugar<\/li>\n<li>1 1\/2 tsp salt<\/li>\n<\/ul>\n<p>1. Combine the <strong>yeast <\/strong>and <strong>water<\/strong> in a bowl and stir to dissolve.  Let it sit until a thick foam forms.<\/p>\n<p>2. Add the <strong>flour, yogurt, oil, egg, sugar,<\/strong> and <strong>salt,<\/strong> and stir by hand, or mix on low speed in an electric mixer using the dough hook attachment, until smooth and elastic but still soft and slightly sticky.<\/p>\n<p>3. Transfer the dough to a second bowl that has been <strong>lightly oiled<\/strong>. Cover the dough with a clean kitchen towel and <strong>let rest<\/strong> at room temperature until nearly doubled in size, about 1 hour.<\/p>\n<p>4. Gently <strong>press down<\/strong> the dough to release any trapped gas. Divide the dough into 8 pieces. Shape the pieces into rounds and then <strong>flatten into disks<\/strong> about 4 inches in diameter. Set them on a lightly floured board and cover with a clean towel. Let the dough rest for 15 to 20 minutes.<\/p>\n<p>The rest of the recipe calls for <strong>grilling the bread<\/strong> using either a gas grill or a charcoal grill, neither of which I was cooking with in my kitchen.
