It\u2019s from a great <a href=\"http:\/\/www.amazon.com\/Vegetarian-Suppers-Deborah-Madisons-Kitchen\/dp\/0767916271\/theguilofscie-20\/\">cook book<\/a> that I found at our local library.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/egggar.jpg\" title=\"egggar.jpg\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/02\/egggar.jpg\" alt=\"egggar.jpg\" \/><\/a><\/p>\n<p>Slash <strong>1 or 2 medium eggplants<\/strong> in several places and fill the slits with <strong>sliced, peeled garlic<\/strong>.<\/p>\n<p>Bake in a <strong>375 degree oven<\/strong> until soft, about <strong>40 minutes<\/strong> for a 1- pound eggplant<\/p>\n<p>When the eggplants are done, set them aside until they are cool enough to handle.<\/p>\n<p>Scoop out the flesh and mix with it with <strong>a little yogurt<\/strong>, <strong>chopped mint leaves<\/strong>, <strong>salt<\/strong> and <strong>freshly ground pepper<\/strong>.
