{"id":79,"date":"2008-03-14T02:53:09","date_gmt":"2008-03-14T02:53:09","guid":{"rendered":"http:\/\/juniorkitchen.com\/?p=79"},"modified":"2008-03-18T16:29:25","modified_gmt":"2008-03-18T16:29:25","slug":"green-rice-with-stuffed-poblano-chiles","status":"publish","type":"post","link":"https:\/\/juniorkitchen.com\/?p=79","title":{"rendered":"Green Rice with Stuffed Poblano Chiles"},"content":{"rendered":"<p>Recently I was given some poblano chiles \u2013 fresh peppers about as spicy as watercress \u2013 so I looked for a recipe for stuffing them. I found this Mexican recipe in this <a href=\"http:\/\/www.amazon.com\/Madhur-Jaffreys-World-Vegetarian-Meatless\/dp\/0517596326\/theguilofscie-20\/\">trusty cook book<\/a>. The green rice sounded kinda spring like.<\/p>\n<p>By following this recipe, we wound up with a lot of extra rice \u2013 you could either cook less of it or else make a few more peppers. That\u2019s probably the wiser course because the whole thing was just delicious.<\/p>\n<p><a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/peppers.gif\" title=\"peppers.gif\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/peppers.gif\" alt=\"peppers.gif\" \/><\/a><\/p>\n<ul>\n<li>poblano chiles (at least 4)<\/li>\n<li>2 ounces Cheddar or Monterey Jack cheese<\/li>\n<li>2 loosely packed cups parsley, leaves only<\/li>\n<li>\u00bd medium onion, coarsely chopped<\/li>\n<li>3 garlic cloves, peeled and coarsely chopped<\/li>\n<li>3 tablespoons peanut or canola oil<\/li>\n<li>2 cups long-grain rice<\/li>\n<li>1 \u00bd teaspoons salt<\/li>\n<li>3 cups milk<\/li>\n<\/ul>\n<p>Roast the <strong>poblano chiles<\/strong> in a <strong>425 degree oven for 25 minutes<\/strong>, turning them over at least once during the cooking time. If they are not completely roasted at the end of the 25 minutes leave them in the oven checking on them every 10 minutes.  After they are completely roasted on both sides take them out and let them cool.  When they are cool to the touch <strong>remove the stem and the seeds<\/strong> from the chiles. Cut the <strong>cheese<\/strong> into <strong>\u00bc inch-thick slices<\/strong>. Lay a slice of the cheese along the one half of a chile. Fold the other half of the chile over the cheese to re-form the chile shape. Do this with all the remaining chiles and set aside.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/green.gif\" title=\"the rice is green\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/green.gif\" alt=\"green.gif\" \/><\/a><br \/>\nIn a blender, combine the <strong>parsley, onion, garlic, and 1\/3 cup of water<\/strong>. Blend thoroughly.<br \/>\nPut the <strong>oil<\/strong> in a medium, heavy-bottomed nonstick pot and set over <strong>medium-high heat<\/strong>. When hot, put in the <strong>rice<\/strong> and the <strong>salt<\/strong>. Turn the heat down to <strong>medium-low<\/strong> and stir and <strong>saut\u00e9 for 6 to 7 minutes<\/strong>, or <strong>until the rice is golden<\/strong>. Add the parsley mixture and bring to a <strong>simmer<\/strong>. Turn the heat down low and cook, stirring very gently, without breaking the rice grains, for <strong>4 to 5 minutes<\/strong>. Add the <strong>milk<\/strong> and <strong>bring to a boil<\/strong>. Cover, turn the heat down to <strong>very low<\/strong>, and <strong>cook for 25 minutes<\/strong>. Lift the cover and very quickly lay the poblano chiles over the rice in a single layer. Cover and keep cooking gently until the cheese has melted. It\u2019ll take just a few minutes.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/rice.gif\" title=\"rice.gif\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/rice.gif\" alt=\"rice.gif\" \/><\/a><br \/>\nServe by placing the chiles off to the side while you scoop the rice out to a serving platter and then arrange the chiles on top.<br \/>\n<a href=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/fork.gif\" title=\"fork.gif\"><img decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2008\/03\/fork.gif\" alt=\"fork.gif\" \/><\/a><\/p>\n<!-- AddThis Advanced Settings generic via filter on the_content -->","protected":false},"excerpt":{"rendered":"<p>Recently I was given some poblano chiles \u2013 fresh peppers about as spicy as watercress \u2013 so I looked for a recipe for stuffing them.
