My. <em>Good<\/em>ness! Don\u2019t be intimidated if you\u2019re not a cottage cheese fan. These pancakes are freakin\u2019 good. <\/p>\n<p>I found the recipe in this <a href=\"http:\/\/www.amazon.com\/Feed-Your-Skin-Starve-Wrinkles\/dp\/1592333427\/ref=sr_1_4?ie=UTF8&s=books&qid=1257183836&sr=1-4\"><i>Feed Your Skin<\/i> book <\/a>and the kids gobbled them up. They don\u2019t need better skin; they just like good pancakes.  We didn\u2019t have the blueberries for the fruit syrup (so much for skin-boosting antioxidants\u2026) but using plain maple syrup still made them incredible. I would like to try them with the blueberries next time because I think the sweetness would just intensify the experience. <\/p>\n<p>These take a little more work than using batter out of a box but are so very much worth it. <\/p>\n<h3>Ingredients<\/h3>\n<ul>\n<li>4 whole eggs <\/li>\n<li>1 cup small-curd cottage cheese<\/li>\n<li>1\/4 cup melted butter<\/li>\n<li>1\/4 cup sifted whole wheat flour (<em>we used white wheat<\/em>) <\/li>\n<li>1\/2 teaspoon grated lemon zest<\/li>\n<li>1\/4 teaspoon salt<\/li>\n<li>canola oil or melted butter for greasing up the pan<\/li>\n<\/ul>\n<p>Combine egg yolks, cottage cheese, butter, flour, lemon zest, and salt in a large bowl. Stir until batter is smooth and thick (the cottage cheese will make it look a little lumpy).<\/p>\n<p>In another bowl, using an electric mixer or a whisk, beat the egg white into a thick foam until soft peaks appear. <\/p>\n<p>Gently fold the egg whites into the batter. <\/p>\n<p><img loading=\"lazy\" decoding=\"async\" src=\"http:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/11\/IMG_5573.jpg\" alt=\"IMG_5573\" title=\"IMG_5573\" width=\"500\" height=\"333\" class=\"alignleft size-full wp-image-918\" srcset=\"https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/11\/IMG_5573.jpg 500w, https:\/\/juniorkitchen.com\/wp-content\/uploads\/2009\/11\/IMG_5573-300x199.jpg 300w\" sizes=\"auto, (max-width: 500px) 100vw, 500px\" \/><\/p>\n<p>Heat griddle or a large skillet over medium high heat. When a drop of water skips over the surface of the pan, it\u2019s ready.  Lightly brush the pan with oil or add a a little butter to the skillet. Drop the batter by large spoonfuls onto the skillet. The pancakes spread a little as they cook, so leave 2 to 3 inches between each one. (Making three at a time was no problem in our average-sized skillet.) Cook until the edges of the pancake are set, about 2 minutes.
