Really, I think they are known officially as soft-cooked eggs or three-minute eggs, but the kids have declared them to be “juicy eggs” and the name stuck at our house. Daughter first tried these over at her grandmother’s house and it’s her favorite way to eat eggs. The other cool thing is you get to use egg cups. I have found some cute ones on eBay that were inexpensive.
Place eggs in a pot, prick the larger end of the egg with a small pin prick to let air bubbles out, cover them with water and set on the stove to boil. Just at the point where the water starts to bubble you turn off the burner and place a lid on the pot. Set the timer for 3 minutes. You can go ahead and make some toast while waiting for the eggs. As soon as the timer goes off, run, place the pot in the sink and run cold water over the eggs. As soon as they are cool enough to handle, transfer them to an egg cup. To eat, tap the top of the egg and with the spoon, cut it off. Cut the toast into strips for dunking into the egg yolk. You can scrape out the rest of the egg from the shell and eat it with a spoon. They actually sell egg spoons for this part but a baby spoon works great too.
