Our 5 year old helped to improvise this recipe with what we had on hand. She’s also the one who named it.
Salad Ingredients
A handful of green beans, blanched in boiling water
2 tomatoes sliced
1 small onion coarsely chopped
1 can of chick peas (garbanzo beans) drained
Dressing Ingredients
1 tablespoon white wine vinegar
1 tablespoon tarragon vinegar (homemade herb vinegar is good.)
2 tablespoons olive oil
pinch of salt and pepper.
Place all the ingredients for the salad in a large bowl.
Whisk the ingredients for the dressing together and pour over the salad.
Toss all the ingredients together.
This salad is particularly yummy if served with crusty bread for soaking up the dressing.

Since she likes garbanzo beans, here’s something you might like to try with her:
Drain a can of garbanzos, dry with a teatowel, lightly stir fry in olive oil until the beans are all lightly crisped on the outside. Then add your favourite herbs or even a favourite commercial seasoning. Stir fry in the herbs another 2-3 minutes. Transfer to a colander so any excess oil can drain yet the beans can ‘dry’. These make a great snack and are healthy to boot. Believe it or not, they’re even enjoyed at kids parties!
