Peanut Butter Oat Bran Cookies

A recipe from baking at Nai-nai’s house, so you know they’re filled with goodness (and surprisingly light for snacks made with peanut butter):


1/2 cup butter, melted

1/2 cup white sugar

1/2 cup brown sugar

1 egg or 2 egg whites

1/2 cup peanut butter

1/2 tsp. vanilla

1 cup unbleached white flour

1-1/2 cups oat bran cereal

3/4 tsp. baking powder

1/4 tsp. baking soda

Preheat oven to 350

Mix melted butter with sugars and egg. Mix well. Stir in peanut butter and vanilla. Beat until smooth. Add dry ingredients, mix well.

Drop by teaspoons onto ungreased cookie sheet. Crisscross each cookie with the tines of a fork.

I kind of push the edges of the cookies together a little with my fingers after pressing with the fork otherwise they get too crumbly around the edges.

Bake 10 – 12 minutes until golden brown. Makes about three dozen cookies.

Our daughter loves oats – she’ll eat them raw with cold milk, like muesli. But this is probably her favorite way to bake with them.

  1. I have a cookie pan that looks just like that. All my friends are like, ewwwwww! And it confirms for me the fact that none of them actually cook. The cookies just slide off that thing! Best (and oldest) kitchen equipment I own.
