Broccoli Salad

This recipe is inspired by this post here, although versions of it have been handed around our family for a while.  Over the years it has become one of the most requested salads at our house. We’ve made it vegetarian friendly by using veggie bacon instead of the real thing. We use soy-made Bacon bits or Morningstar Farms Veggie Bacon Strips. The “bacon” works nicely to round out the flavor and add a little extra crunch.

  • 2 bunches broccoli (about 1 pound) cut into very small florets
  • 1 medium purple onion, finely chopped
  • handful bacon substitute
  • handful golden raisins
  • handful or walnuts

Assemble all the ingredients and place in a bowl.

Next make the salad dressing.

  • 1 cup mayonnaise
  • 2 tbsp red vinegar (I’ve used apple cider when I’m out of red)
  • 1/2 cup sugar (or less if you don’t want it too sweet)
  • Salt and pepper to taste

Place all ingredients into a large bowl and stir until creamy.

Pour the dressing over the salad and mix it in well.

Serve immediately or later that day.

  1. thanks for the inspiration! i made this broccoli salad for last nite’s dinner. my husband (NOT a broccoli fan) took one bite (as a token toward my effort) AND THEN WENT BACK FOR A HUGE SECOND HELPING!
